Marinated olives – careful craftsmanship with heart
Before our olives end up in a jar, Oma Moni takes care of each individual fruit with time and dedication.
Even before the main harvest begins, she walks from tree to tree and carefully hand-picks only the finest olives, especially suited for marinating. Afterwards, she checks each oliveindividually and sorts out anything that does not meet her standards. Next, she gently scores the olives so the bitter compounds can be released more easily.
This is followed by soaking them in water for several weeks, during which she regularlychanges the water. The correct water temperature is important here – experience, care and intuition are essential.
Only once the olives have developed their mild, balanced flavour does Oma Moni placethem in salt brine, where they continue to mature slowly.
Finally, she refines the olives with herbs, garlic or other ingredients, fills them into jars and gently preserves them.
A slow process, a lot of manual work and great dedication –
for olives full of character and genuine flavour, completely free from chemicals

Flor de Sal from Cabo de Gata – Sun, Sea & Pure Taste
Between the sea, salt lagoons and endless sunshine, something truly special is created:
Flor de Sal from Cabo de Gata.
In the traditional salt pans of the natural park ,a delicate salt blossom
forms on the water’ssurface on warm, windless days.
This fine “flower of salt” is carefully hand-harvested, gentlydried and left completely unrefined.
The result is an exceptionally mild, crisp sea salt with a delicate texture and a hint of sea breeze.
It melts softly on the tongue and enhances the natural flavor of ingredients withoutoverpowering them.
Whether sprinkled over tomatoes with olive oil, grilled vegetables, meat, fish, pasta or a simple slice of bread – just a pinch of Flor de Sal is enough to turn a good dish into a smallmoment of indulgence.
Tip:
Always add Flor de Sal at the very end of cooking – this way the delicate crystals and fullaroma are preserved.

A personal favourite: our fried and salted almonds from the region.
Extra fresh, wonderfully crunchy and full of flavour.

Crunchy, savoury and highly addictive – once you start, it’s hard to stop.
Perfect

with a glass of wine or beer
-
as a tapas snack
-
as a gift (if you don’t finish the bag yourself first 😄)

Honey
Sierra Filabres – Made by Queens
Honey from the desert and mountain landscape of Almería.
This honey comes from the region of Almería, where mountain ranges and desert-like landscapes meet.
The diversity of blossoms and the special climatic conditions shape the character and flavour of each variety.
For me personally, a true taste experience – I could spoon it pure. We have consciously chosen the following small selection of these regional honeys:
-
Orange Blossom Honey (Azahar)
Light, mild honey with a delicate floral aroma and a pleasant lightness.
-
Almond Blossom Honey (Almendro)
The almond tree is one of the first fruit trees to bloom each year. The production of this honey is particularly demanding, as bees have only a very short period of time to collect nectar from the almond blossoms. Fine, mild honey with a subtle sweetness.
-
Lemon Blossom Honey (Limón)
It is considered one of the greatest delicacies of beekeeping. For thousands of years, it hasbeen regarded as a home remedy for countless ailments and illnesses. Mild in taste with a fine, characteristic aroma.
-
Lavender Blossom Honey (Espliego)
With its amber colour, it has an intense yet delicate aroma.
-
Multifloral Honey (Mil Flores)
Sweet, round and aromatic, with a great variety of floral notes.

Bee pollen can easily be integrated into daily life:

mixed with honey
Many people let the pollen dissolve briefly in the mouth or soak it in a little water or juicebeforehand to make it easier to eat.

Gelée Royale
Gelée Royale is produced by nurse bees and serves as the exclusive food of the queen bee. While worker bees live only a few weeks to months, the queen reaches an age of several years thanks to thisspecial nourishment. This uniqueness makes Gelée Royale one of the most extraordinary products ofthe beehive.
Gelée Royale naturally contains minerals such as iron, potassium, calcium, silicon, phosphorus, copper, cobalt and strontium, as well as a wide range of vitamins, including A, various B vitamins, C, D and E.
Traditionally, Gelée Royale is valued as a particularly precious natural supplement. Many associate it with periods of increased stress, intense activity or the desire for more energy, focus and inner balance. An exclusive natural product for those who seek something special and wish to consciously add something valuable to their daily routine.
Consumption recommendation.
It is recommended to take it on an empty stomach, preferably in the morning. A very small amount isusual – about the size of a grain of corn.
The Gelée Royale is placed under the tongue with the help of a small spoon and allowed to dissolveslowly.

Capers
Capers from a small producer where great importance is still placed on handcraft and traditional processing.
Capers are very versatile in the kitchen. They are most commonly used in sauces as well as in Italian pasta dishes and in Greek cuisine, where they have been used since ancient times.
They pair excellently with fish dishes such as sea bream or salmon and harmonise very well with anchovies, for example in pasta sauces like puttanesca. They also work very well on pizzas and focaccias as well as with chicken dishes. In more modern cuisine, capers are also used in sauces such as tartar sauce or remoulade, as well as in steak tartare.
Storage:
As long as the capers are kept in their original liquid (water and vinegar), they can be consumed until the stated best-before date.
If desired, we recommend draining the liquid and refilling the jar with extra virgin olive oil. This preserves the capers in oil and allows the oil to absorb the intense, slightly acidic flavour of the capers.
This is not mandatory, but merely a recommendation.
Description:
Packaging: 250 g jar
Ingredients:
Capers, salt, vinegar.

Confitura de Tomate RAF rojo & verde (Tomato Chutney) & Pimiento Rojo
This product line is based on selected vegetables from the region of Almería, above all the RAF tomato, a particularly aromatic tomato variety. RAF stands for Resistente al Fusariumand refers to a tomato with an intense flavour and a well-balanced combination of sweetness and acidity.
A distinction is made between RAF Rojo, fully ripe with a rounder flavour, and RAF Verde, harvested earlier, fresher and slightly saltier – a typical speciality of Andalusian cuisine. This line is complemented by Pimiento Rojo, red peppers with a natural sweetness that are ideal for savoury preparations.
The products of this line are particularly well suited to Mediterranean cuisine, tapas, cheese, meat dishes or as aromatic accompaniments on bread and antipasti.

Línea de Autor: Tomate Frito, Tomate Frito con Setas y Trufa, Pisto de Autor
The Línea de Autor comprises special creations based on classic recipes of Spanish cuisine, which are further developed as fine food products.
This line includes Tomate Frito, a classically prepared tomato sauce in Spanish style, Tomate Frito con Setas y Trufa, refined with mushrooms and truffle, as well as Pisto, a traditional Spanish vegetable preparation based on tomatoes with peppers, onions and courgette.
The products are versatile and can be used as a sauce, side dish or base – for example with pasta, rice, egg dishes, meat, fish, vegetable dishes or as a flavourful addition on bread, with tapas or in Mediterranean cuisine.
